The nickel won't melt, peel or chip-you can even clean it with a wire brush. Unlike standard cast iron, the pan won't give food a metallic taste. It also conducts heat better than stainless steel. Says Smith: "I've never seen steak sear so well." A 10-in. skillet is available for $75.
