Pungent is better when it comes to onions. In a study of shallots and 10 varieties and onions, Cornell University scientists found that compared to mild varieties like the Vidalia, the robustly flavored shallots and Western Yellow and New York Bold contained the highest levels of disease-fighting antioxidants.
