Before moving to the dining room, the 51-course meal begins outdoors. Here, a server puts the finishing touch on elBulli's "gin fizz": a hot, thick, lemony foam. On the tray are the restaurant's famous spherical olives — the essence of olives reconstituted within a thin gel that pops with flavor once in the diner's mouth.
