The New Zealander is best known for breathing new life into the fishing shack turned luxury hotel Huka Lodge on the banks of Lake Taupo. But it's Eichardt's Private Hotel in Queenstown, New Zealand, that really shows Fisher's smarts. Each suite has a roaring fire, a view over Lake Wakatipu and dressing rooms designed to make unpacking easy.
